This week, I’m sharing some of my favorite cozy fall recipes for October. These dishes feature seasonal ingredients like pumpkin, sweet potatoes, apples, and warming spices. They’re nourishing, plant-forward, and simple enough for busy weekdays.

  • These roasted apple and pear overnight oats are like fall in a jar, with soft fruit, warming spices, and creamy oats. Prep ahead for busy mornings!
  • A twist on the classic, this white bean chili with harissa adds just the right amount of heat and smoky depth. Great for chilly nights when you want something hearty and plant-based.
  • This pumpkin coconut curry is ultra-creamy, full of vegetables, and ready in one pot. Canned pumpkin purée gives the sauce its velvety texture, while tofu and sweet potatoes make it filling and satisfying.
  • A cozy dinner bowl that feels equal parts nourishing and grounding. This fall harvest bowl is filled with roasted sweet potatoes, marinated baked tofu, nutty farro, and a drizzle of apple cider dressing.
  • It doesn't get any more comforting than this easy black bean taco casserole. Layers of protein-packed beans, hearty veggies, and melty cheese (or dairy-free alternative) make this a guaranteed weeknight win.
