New: simple curried pumpkin soup with coconut milkj

Hi Reader,

It's been a few months since I last shared a new recipe, partly because I never feel like I have enough time to bring the ambitious ideas in my head to life. I see a version of this with clients, too. They’re busy working or caring for family all day, and by dinnertime the energy to cook just isn’t there.

What I think often gets missed is the bits of perfectionism at play. We tend not to count the simple meals, as if it’s only "real" cooking if it has a certain number of ingredients, steps, or freshly chopped vegetables.

So I’ve been leaning into simpler recipes lately, the kind of meals so easy you barely even need a recipe. Partly for selfish reasons, and partly because recipes like this are the most practical application of how I actually think about nutrition. This is how we feed ourselves consistently in real life.

This Simple Curried Pumpkin Soup is first on my list. Canned pumpkin, coconut milk, broth, and curry powder simmer into a warm and cozy bowl in 20 minutes, with no chopping at all. Finish it with a splash of lime and some warm naan, or stir in chickpeas, lentils, tofu, shrimp, or shredded chicken to make it heartier. This also reheats well, so you can make it once and have lunch for days.

Chocolate pudding with raspberries

Hi Reader, For a long time, I felt like I couldn't keep cookies in the house. If they were in the cabinet, I was thinking about them. I'd have one, then another standing at the counter, then decide I might as well finish what was left so they'd be gone and I could "start fresh" tomorrow. So mostly I just didn't buy them. That made cookies feel rare and a little dramatic, and I rebelliously consumed them whenever I got the chance. What changed things for me was slow and kind of boring. I...

Pumpkin curry with rice

Hi Reader, I'm currently looking out at the aspen leaves turning gold outside my window. It's really starting to feel like fall, which is truly one of the most beautiful times to be up here in the mountains. My oldest has a birthday this week, and we're throwing a small party, hopefully outside if the weather cooperates (this time of year, you never really know). In past years I've gotten a little too excited about making everything homemade, leading to me feeling stuck inside rolling out...

Hi Reader, If you've never worked with a non-diet dietitian, you might wonder what we even talk about. Here's the framework I use often with my clients. Step one: Consistent, satisfying eating Before anything else, your body needs to trust that food is coming regularly and that it will actually be enough. This step is about eating on a rhythm that works for your life, choosing foods that satisfy you, and letting go of the idea that skipping meals or eating "light" is doing you any favors....
