6 satisfying recipes for October

Hi Reader,

I'm currently looking out at the aspen leaves turning gold outside my window. It's really starting to feel like fall, which is truly one of the most beautiful times to be up here in the mountains.

My oldest has a birthday this week, and we're throwing a small party, hopefully outside if the weather cooperates (this time of year, you never really know). In past years I've gotten a little too excited about making everything homemade, leading to me feeling stuck inside rolling out pizza dough while everyone else was already at the party. This year the pizza's coming from a local restaurant instead. I'm keeping everything else simple too: cupcakes, a veggie and dip tray, and fresh fruit. Good food can be simple, especially for a party. I'd rather be out there enjoying it than stuck in the kitchen.

This month's recipe roundup leans into pumpkin and apples, along with a few other seasonal favorites, for easy, satisfying, plant-forward meals as the weather cools down.

Be sure to hit reply if you try anything. I read every message personally and would love to hear from you.

Pumpkin Overnight Oats with Coconut Milk Made with pumpkin puree, coconut milk, and cozy spices. Mix it the night before and breakfast is ready to grab and go.

Cinnamon Apple Tahini Oatmeal Bowl Apples cooked soft in cinnamon and cardamom, stirred into oats made creamy with tahini. Ready in about 15 minutes on a chilly morning.

Easy Pumpkin Tofu Curry with Coconut Milk A cozy, one-pot dinner with tofu simmered in pumpkin puree, coconut milk, and warming spices. Keeps well for a few days, so it's a good one to make ahead.

Vegan Coleslaw with Apples and Tahini Dressing Crunchy cabbage, crisp apple, and chickpeas tossed in a creamy tahini dressing. A good side for a fall dinner or a quick lunch on its own.

Easy Oven Roasted Pumpkin with Tahini Sauce Roasted pumpkin wedges served with an earthy tahini sauce, pomegranate, and toasted nuts. A simple side that also works well on a holiday table later in the year.

Spelt Berry Salad with Apples and Balsamic Vinaigrette A hearty grain salad with spelt berries, kale, apple, and walnuts in a cinnamon balsamic vinaigrette. Good enough to make on repeat all season long.

Warmly,

Stephanie

Hi Reader, If you've never worked with a non-diet dietitian, you might wonder what we even talk about. Here's the framework I use often with my clients. Step one: Consistent, satisfying eating Before anything else, your body needs to trust that food is coming regularly and that it will actually be enough. This step is about eating on a rhythm that works for your life, choosing foods that satisfy you, and letting go of the idea that skipping meals or eating "light" is doing you any favors....

Hi Reader, September always feels like a month of transitions, and that's even more true for our family this year. Both kids started preschool a couple of weeks ago, and our whole routine is shifting with that change. Earlier mornings and full days call for satisfying dinners that come together quickly and without too much effort. If you're in a similar season of life, or you just want easy, satisfying plant-forward meals right now, this roundup is for you. September also has its own kind of...

Hi Reader, A lot of the nutrition advice aimed at plant-based eaters is either fear-based or overly complicated. I wanted to share a handful of things I actually pay attention to, with myself and the people I work with. Protein, plus the whole plate Protein is usually the first question I get, and it deserves real attention. Beans, lentils, tofu, tempeh, edamame, and eggs or dairy, if you eat them, are all solid sources, and most people can get enough with some intention and variety across...
