Your vegetarian Thanksgiving menu starts here

Hi Reader,

One of my favorite things about Thanksgiving is that everyone has their must-have dish. For some people it’s turkey or the mashed potatoes. For me, it’s stuffing, especially made with brown butter, fresh herbs, and toasted walnuts, with plenty of crispy edges.

The other recipe I keep coming back to is this lentil loaf. I made it last year and it just might have earned a permanent spot in my holiday rotation.

Knowing your favorite recipes is like intuitive eating in action. It’s your own taste and experience telling you what makes a meal feel satisfying in your body. If you’re starting to think about your Thanksgiving menu, here are some more ideas.

Curried pumpkin soup with coconut milk, fresh herbs, and crushed red pepper.

Hi Reader, It's been a few months since I last shared a new recipe, partly because I never feel like I have enough time to bring the ambitious ideas in my head to life. I see a version of this with clients, too. They’re busy working or caring for family all day, and by dinnertime the energy to cook just isn’t there. What I think often gets missed is the bits of perfectionism at play. We tend not to count the simple meals, as if it’s only "real" cooking if it has a certain number of...

Chocolate pudding with raspberries

Hi Reader, For a long time, I felt like I couldn't keep cookies in the house. If they were in the cabinet, I was thinking about them. I'd have one, then another standing at the counter, then decide I might as well finish what was left so they'd be gone and I could "start fresh" tomorrow. So mostly I just didn't buy them. That made cookies feel rare and a little dramatic, and I rebelliously consumed them whenever I got the chance. What changed things for me was slow and kind of boring. I...

Pumpkin curry with rice

Hi Reader, I'm currently looking out at the aspen leaves turning gold outside my window. It's really starting to feel like fall, which is truly one of the most beautiful times to be up here in the mountains. My oldest has a birthday this week, and we're throwing a small party, hopefully outside if the weather cooperates (this time of year, you never really know). In past years I've gotten a little too excited about making everything homemade, leading to me feeling stuck inside rolling out...
