🥗 The real reason I eat so many vegetables


Hi Reader,

One thing I really believe: food is supposed to taste good. Vegetables included. You don't have to suffer through plain, raw produce to eat well. And honestly, a really good dressing or a well-made grain bowl is exactly how I end up eating more vegetables without thinking about it at all.

Here are some of my favorite recipes to practice this spring eating philosophy:

  • ​Spring Farro Salad with Tahini Dressing — Asparagus, strawberries, chickpeas, avocado, fresh mint, and a creamy tahini drizzle on a bed of farro. The kind of salad that works for a weeknight dinner or a table full of people.
  • ​Pesto Pasta with Chickpeas and Vegetables — Serve warm as a cozy spring dinner or cold as a pasta salad the next day. One of those recipes that conveniently does both well.
  • ​Vegan Chickpea Peanut Protein Bowls — Hearty, satisfying, and built on a base of seasonal greens with a peanut sauce that's worth making a double batch of.
  • ​Strawberry Avocado Salad — Simple, beautiful, and comes together fast. Great on its own or alongside brunch or grilled proteins.
  • ​Edamame Crunch Salad — Lots of texture, lots of flavor, holds up well if you make it ahead. A reliable one for meal prep.
