🌿 Behind the scenes this week


Hi Reader,

I got my first real harvest from my little countertop garden this week, a small bowl of cherry tomatoes that were so sweet and so good.

I also put together a new home office space, mostly just rearranging furniture we already had in other areas of the house. A photographer came by to get some photos in there for my website, plus the kitchen and outside with the whole family.

I made my go-to green pasta recipe for the photo shoot, alongside sautéed zucchini, yellow squash, and cherry tomatoes. One thing I love is that you can prep the green sauce a day ahead. It's kind of like a high-protein pesto, and if you like that direction, my quick walnut pesto or pesto pasta with chickpeas and vegetables are worth a try too.

The kids and I also blended up a strawberry banana smoothie while the photographer was here. I love it for summer because it only takes a few minutes and there's no cooking required.

I'd planned to make these homemade energy bars, too. They freeze well and are one of my go-to meal prep staples, but when I got back from the store, I realized I was out of oats, so sadly, they'll have to wait until next time.
