🥐 New: Bacon Avocado Croissant Sandwich with a Vegetarian Option


Hi Reader,

This sandwich is inspired by one of my favorite local coffee shop orders. A warm, flaky croissant layered with crispy bacon, melted Swiss cheese, mashed avocado, juicy tomato, and garlic aioli.

It's rich, savory, and hits that perfect balance of crispy, creamy, fresh, and satisfying.

And yes, I make it with real bacon.

There was a time when that would have felt like breaking a rule. For years, I held onto the idea that if I cared about eating vegetarian, I needed to do it perfectly. As if choosing the bacon sandwich somehow meant I wasn't aligned with my values or identity as a dietitian.

But I've since accepted that I'm a plant-forward dietitian and I enjoy bacon. Both can be true at the same time.

Plant-forward doesn't mean plant-perfect. Many of my meals are centered around plants, and sometimes, I choose meat because it sounds good, feels satisfying, or just fits the moment.

Now if you personally prefer not to eat meat at all, that's all good with me too. The recipe includes a vegetarian bacon option so you can make it in a way that aligns with your unique preferences and values.

That's the beauty of intuitive eating. It's completely individualized. You get to decide what it means for you. (I write more about that nuance here).
