🥦 New Vegetable Stir-Fry with Noodles (easy, cozy dinner)


Hey there Reader,

Some nights call for elaborate cooking projects. And some nights call for a quick and easy dinner you can make in under 30 minutes without really thinking about it.

This vegetable stir-fry is a great option for the latter scenario, when you want something nourishing, colorful, and comforting, but don’t have much energy for planning or chopping.

It’s made with frozen stir-fry vegetables, edamame, and noodles, all tossed in a simple ginger-garlic sauce you can whisk together in minutes (or prep days in advance). It’s flexible, forgiving, and a great reminder that feeding yourself well doesn’t have to be complicated to be satisfying.
